5 de Mayo SHUGA! Churros!

5 de Mayo SHUGA! Churros!
For the Chocolate-Coffee Sauce:
  • 45 g Heavy Milk
  • 5 g Instant coffee
  • 4 g Hey SHUGA!
  • 50 g Semisweet chocolate
  • 50 g Milk chocolate
  • 20 g Butter
For the Dough:
  • ½ butter stick
  • 3 tbs Hey SHUGA!
  • ½ tsp salt
  • ¾ cup water
  • 1 cup flour
  • 1 tsp vanilla
  • 3 eggs
  • Oil for deep frying
For the Chocolate-Coffee Sauce:
  1. Bring to a medium heat the heavy cream, coffee and Hey SHUGA!
  2. Remove from heat and pour the mixture in a separate bowl with the chocolates. Move gently until the chocolate is completely melted.
  3. Add the butter and blend.
For the Dough:
  1. Bring butter, Shuga!, salt and water to heat.
  2. Bring to a boil and add flour all at once, stirring well over low heat and eliminating lumps. Allow the batter to thicken well until a single ball is formed and it can be lifted from the bottom of the pan.
  3. Remove from heat, add vanilla and eggs one by one and blend well with the help of a wooden spoon.
  4. Fit a large sleeve/piping bag with a large star tip and fill with the dough.
  5. On a greased paper plate, squeeze out the dough cutting it with a knife to the desired length.
  6. Take to the freezer for a few hours.
  7. Once ready to fry, heat cooking oil in a heavy pan with high sides.
  8. Fry just a few churros at a time, flipping them to have both sides golden. Drain on a wire rack.
  9. Serve with Chocolate-Coffee Shuga sauce.
  10. Enjoy!
